Luzern, Switzerland - Artisan Cuisinier is proud to announce the release of Sous Vide Celsius 3.0.1, an update to its lifestyle app for iOS devices. With the development of home grade sous vide appliances this cooking techniques has gained a lot of attention in recent months. With the holiday season coming up: The timing is just right! The Sous Vide Celsius app has been designed to take you from first steps to an advanced level. It uses simple tutorials and Sous Vide timers - mini-recipes with an alarm - to help you with every step along the way.

Are your readers convinced that sous vide is the best cooking method since the discovery of fire? Those who enjoy cooking and fine food, must have heard about the sous vide cooking technique by now. Most home cooks and professionals will try out this method at least once and many will remain dedicated to the development of this incredibly precise and versatile cooking technique. To help with first steps and advanced techniques - there is the Sous Vide Celsius iPhone App.

A zip-bag, a cooking pot and a thermometer is all you need. Most sous vide recipes work without special equipment. Later on you may want to go out and get a sous vide circulator or use a combi-oven with steam temperature control. But no need to rush. This is slow cooking - at very precise temperatures.

In the Sous Vide Celsius App you will find simple tutorials that take you from first steps to an advanced level. The app is based on "Sous Vide Timers" for a variety of ingredients. Timers are like mini recipes. Temperature/time recommendations with instructions on how to use the sous vide technique with a your product.

Before you start cooking you often do some mise-en-place (setting into place), pre-searing or brining. Then you set the waterbath temperature, drop the food in a sous vide bath and set the app timer. When the time is up the alarm goes off and you may sear your food again and season it before serving.

Ever tried to find sous vide recommendations on the internet? Have you been wondering about the discrepancies? The time for a piece of meat to reach a core temperature can be calculated using a formula propagated by Douglas Baldwin," explained Jonas Frei, Owner of Artisan Cuisinier. "It is also used in the PolyScience(TM) Toolbox app (formerly Sous Vide Dash). The formula uses thermal diffusivity, thermal conductivity and surface heat transfer to calculate the time such shapes as cylinders, cubes and steaks need to aquire a certain core temperature. But food is never an exact geometrical shape and waiting for an extra hour for a piece to reach an additional half degree is impractical. We have tested sous vide recommendations that work and tutorials that make the first steps easy - for professionals and home cooks."
